I’m tired but I still have to cook kind of night….

Welp, another night I’m a solo parent cause my hubby is out there helping people in healthcare. I’m worn out, burnt out, over it, and uninspired to think of something to cook. Here’s what I could muscle up from the ingredients in my fridge. This was hard…. 🤦🏼‍♀️

Baked salmon with fresh parsley, lemon juice and any spice I felt like went with the meal (I just used lemon pepper, salt, pepper, and garlic powder). I then sauteed zucchini, onion, tomatoes, some tomato sauce, a little chili powder, Italian seasoning and let the thing simmer. Then I used leftover bread to dice, toss in olive oil, and then baked for 5-10 mins on 450 degrees depending on desired “doneness”. Threw some white beans of my choice in with the zucchini, tomato stew, added the baked croutons, fresh parsley, and some ricotta to top the side off.

I was so dang tired from homeschooling the kids today, but mannnnnnn this meal was good. Easy, and under 30 mins. Plus, twas healthy!
